Web Browser: Firefox. I've tried other browsers that were less resource intensive, but Firefox is easily the most compatible and extensible that I've seen.
Audio and Video: Totem and Audacious. Audacious has a Winamp-like interface and some cool features like SoundFont replacement for MIDIs.
Text editor: Leafpad. Opens configuration files quickly and it's easy to use.
Disc Burning: Usually Brasero, sometimes K3B if Brasero can't handle something.
Graphics: GIMP for raster and Inkscape for vector.
File Browser: I liked Nautilus from GNOME 2.* days, but I've found that Thunar can do a pretty good job of imitating it while being quicker and lighter.
Office: I use the LibreOffice suite.

We can also make pbi request for leafpad, gpicview and okular

kopete and okular are part of KDE, so if you install KDE-Graphics (Okular) and KDE-Network (kopete) you can find them there.
The other two apps can be installed from ports or packages:

net-im/kopete is unmaintained. It's being replaced by Telepathy. ( net-im/telepathy-qt ?)

AnbuBlack, we can request to build PBIs for Kopete, Okular, leafpad and gpicview so that they will be available in AppCafe.
